What Actually Is Raw Kombucha?

"Raw" gets thrown around a lot. Here's what it actually means, and why it's the difference between real kombucha and the stuff pretending to be it.

Raw vs Pasteurised: The Real Difference

Most supermarket kombucha is pasteurised, meaning it's heat-treated after fermentation to make it shelf-stable for months. That heat also kills the live bacteria and yeast cultures that made it kombucha in the first place.

What's left is a fizzy, slightly tangy drink with the name kombucha and none of the actual biology. It's not dangerous, it's just not doing much.

Raw kombucha skips that step. It stays unpasteurised, which means the live cultures, organic acids, and enzymes that developed during fermentation are still there when you drink it. It's genuinely alive, which is also why it needs to be kept refrigerated and doesn't sit on a shelf for a year.

How Raw Kombucha Is Actually Made

Real kombucha starts with a SCOBY (a Symbiotic Culture Of Bacteria and Yeast), sweet tea, and time. The culture ferments the tea over days or weeks, producing the organic acids, trace alcohol, and live cultures that give kombucha its character. Flavour, carbonation, and tartness all depend on brewing time, temperature, and what's added after the base ferment.

Every producer does this slightly differently, which is exactly why the 40+ varieties we stock all taste genuinely different from each other, not just different labels on the same base liquid.
